SIMPLE MUSHROOM DISH
Ingredients:
- 1 kg Mushroom
- 2 boneless chicken breast (cut in cubes)
- Spring onions
- 4 tblspns lime juice
- 2 tblspns Soya Sauce
- Salt as needed
- 1 cup Chicken stock
- Pepper
- 1 1/2 tblspns corn starch (mixed in 1 cup of water)
- Olive oil
- On a saucepan, pour 2 tblspns olive oil and cook the mushroom. After it's half cooked put the 2 tblspns of lime juice and a pinch of salt and let it continue cooking. After it's done, separate the juices of the mushroom from the mushroom and keep them aside.
- On the same saucepan, pour some olive oil and put the spring onions (you can add vegetables if you like). Then add the chicken,salt & pepper and let it cook till the chicken is light brown. Then add the mushroom, chicken broth, mushroom juice, the leftover lime juice, soya sauce and the corn startch; stir well. After the juices has been thickened, you can serve it.
